Oyster sauces are sauces that are made from cooking oysters. Normally these sauces are slightly thicker than water and dark brown in color. Lower end versions are colored with caramel, but the higher quality ones are naturally dark.
Oyster sauce is mainly used in south-eastern Asian kitchens.
